What You’ll Need
- 2 cups Jasmine Rice
- 4 cups Water
- 1 tbsp Freshly chopped ginger
- 6 Kaffir lime leaves
- 1 tsp Salt
- 1 tbsp Vegetable Oil
- 1 Lime (For juice and zest)
Method
Step One
Start by rinsing the jasmine rice under cold water until the water runs clear. This step helps to remove any excess starch from the rice, ensuring a fluffier end result.
Step Two
Heat up the vegetable oil in a large saucepan over medium heat. Once the oil is hot, add in the freshly chopped ginger. Sauté the ginger until it becomes fragrant.
Step Three
Next, add the rinsed rice into the saucepan with the ginger. Stir well to coat the rice with the ginger and oil. Cook this for a couple of minutes, until the rice starts to look slightly toasted.
Step Four
Now it’s time to add the water, kaffir lime leaves, and salt. Stir everything together and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer.
Step Five
Let the rice cook for about 15 minutes, or until all the water has been absorbed. Once the rice is cooked, remove from the heat and let it sit, still covered, for another 10 minutes. This rest period allows the rice to finish absorbing any remaining water.
Step Six
After the rice has rested, remove the kaffir lime leaves. Then, zest and juice the lime. Stir the zest and juice into the rice before serving. Fluff the rice with a fork to combine everything well. Your Kaffir Lime Leaf and Ginger Infused Jasmine Rice is ready to serve!
