What You’ll Need

  • 1 cup all-purpose Flour
  • 2 tablespoons White Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/8 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Milk
  • 1 large Egg
  • 1/4 cup melted Butter
  • 3 medium ripe Bananas, mashed
  • 2 ripe Kiwano Melons, flesh scooped out and mashed
  • 1 tablespoon vegetable oil, for frying

Method

Step One

Start by combining the dry ingredients together. In a large bowl mix the all-purpose flour, white sugar, baking powder, baking soda and salt. Stir them together until well combined.

Step Two

In another bowl, blend the wet ingredients. You take the buttermilk, milk, and large egg and whisk them together. Then, slowly pour in the melted butter while continuously whisking.

Step Three

Next, you will incorporate the bananas and kiwanos. Mash the ripe bananas and the flesh of the kiwano melons in a separate bowl and then add them to the bowl with the wet ingredients. Mix all elements until well combined.

Step Four

Now, mix the wet ingredients with the dry ones. Slowly pour the wet mixture into the large bowl containing the dry ingredients, while stirring. Mix until the batter is lump-free, but remember to not overmix as this can make the pancakes tough.

Step Five

Preheat a pan over a medium heat and add a dash of vegetable oil. Once the pan is hot, scoop a quarter cup of batter onto the surface for each pancake. Cook them until bubbles form on the surface, then flip them, and wait until their undersides turn golden brown.

Step Six
