Although this particular recipe is a sweet deviation from the classic New England seafood and Irish comfort food I usually make, it still brings warmth and joy, just like traditions should.

These fruits are known for boosting immunity and aiding digestion, making a seemingly indulgent treat into a nutritious one. Additionally, swapping out fat-laden desserts with this is a great strategy for those maintaining weight or following a plant-based diet. The incidental lime zest and juice’s present adds sources of vitamin C and calcium.

What You’ll Need

  • 1 cup of granulated sugar
  • 1 cup of water
  • 6 ripe kiwifruits, peeled and quartered
  • 2 ripe mangoes, peeled, pitted, and chopped
  • Zest and juice of 1 large lime

Method

Step One

Begin by creating a simple syrup. In a medium saucepan, combine 1 cup of granulated sugar with 1 cup of water. Bring the mixture to a gentle boil over medium heat, stirring occasionally, until the sugar has fully dissolved. Remove the saucepan from heat and set aside to cool.

Step Two

While the simple syrup is cooling, prepare your fruit. Take 6 ripe kiwifruits and peel and quarter them. Then, take 2 ripe mangoes, peel them, remove the pits and chop the flesh into cubes. Place the prepared kiwifruit and mango into a blender or food processor.

Step Three

Add the zest and juice of 1 large lime into the processor along with your fruit. Once your simple syrup has cooled, pour it into the blender as well. Blend all the ingredients together until smooth. It should have the consistency of a thick smoothie.

Step Four

Pour the fruit and syrup mixture into a shallow dish. Cover the dish and place it in the freezer. Allow the sorbet to freeze for at least 2 hours, or until it is completely solid.

Step Five

Before serving, remove the sorbet from the freezer and let it sit at room temperature for a few minutes to soften. Then, using a scoop or spoon, serve the sorbet in dessert dishes. Enjoy your refreshing Kiwifruit and Mango Sorbet!
