Komatsuna and Pork Soup

As someone who grew up with a mélange of delicious Cuban and Spanish cuisine, I find it exhilarating to explore flavors from other parts of the world. This Komatsuna and Pork Soup strikes that perfect balance between hearty and healthy, making it a dish I absolutely adore. The moment you take in that first spoonful, you’re greeted with a variety of textures and tastes that remind me of comforting home-cooked meals. Living in Miami means that I’m no stranger to dishes bursting with flavor, and this particular recipe brings something unique to the table.

A Nutritious Powerhouse

One of the many reasons I love this Komatsuna and Pork Soup is its incredible nutritional profile. Komatsuna, also known as Japanese mustard spinach, is rich in essential vitamins like A, C, and K, as well as minerals such as calcium and iron. These nutrients are vital for bone health, immune function, and overall well-being. The pork belly adds a deliciously savory element, while also providing a good amount of protein and healthy fats, which are excellent for muscle repair and sustained energy levels.

Easy to Pair with Other Dishes

I’ve found that this soup works phenomenally as both a standalone meal and a complement to other dishes. If you’re in the mood for a tapas-inspired evening, consider pairing it with some crusty bread or a light salad. I personally love serving it alongside Sopa de Ajo, a traditional Spanish garlic soup. The contrast in flavors makes for an exquisite dining experience.

Healing and Comforting

There’s something infinitely comforting about a warm bowl of Komatsuna and Pork Soup. Whether life has you bustling around or you’re simply seeking a cozy night in, this soup feels like a gentle hug from the inside out. The combination of chicken broth, water, and vegetable oil forms a rich, soul-soothing base. Adding garlic and soy sauce not only elevates the flavor but also impart antimicrobial and anti-inflammatory benefits, perfect for keeping your immune system in check.

So, next time you’re in need of a dish that melds nutritious ingredients with robust flavors, give this Komatsuna and Pork Soup a try. It’s a celebration of culinary cultures and a testament to how food can nourish both the body and soul.

What You’ll Need

  • 1 pound pork belly, thinly sliced
  • 1 bunch komatsuna, chopped
  • 1 large onion, thinly sliced
  • 2 medium carrots, sliced
  • 4 cups chicken broth
  • 3 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
ALLERGENS: Soy, Pork

Method

Step One

Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

Step Two

Add the thinly sliced pork belly to the pot. Cook until the pork is no longer pink, stirring occasionally to prevent sticking.

Step Three

Add the sliced onion and carrots to the pot. Cook for about 4-5 minutes, until the vegetables start to soften.

Step Four

Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook for about 10 minutes, or until the vegetables are tender.

Step Five

Add the chopped komatsuna to the pot. Stir in the soy sauce and mirin (if using). Cook for another 3-4 minutes, until the komatsuna is wilted and tender.

Step Six

Season the soup with salt and pepper to taste. Serve hot and enjoy!
