About Lagana

The Greek flatbread known as Lagana is a delightfully simple, yet immensely satisfying staple of Hellenic cuisine, beloved by adults and children alike. Reminiscent of other types of flatbreads around the world, this bread shines in its minimalistic approach, turning simple ingredients into a canvas of culinary pleasure.

A History Steeped in Tradition

The timeless Lagana recipe traces back through countless generations to the ancient Greeks, and it has managed to retain its humble roots while subtly adapting over time. Today, this bread is most commonly associated with Kathara Deftera, or ‘Clean Monday,’ which marks the beginning of Lent for the Greek Orthodox Church. On this day, a particular Lagana bread – a soft, slightly chewy flatbread – is traditionally baked. Yet, its wonderful simplicity and versatility mean that it lends itself perfectly to be enjoyed any day of the week.

The Taste Profile of Lagana Bread

With its pleasingly chewy texture and subtle hint of olive oil, Lagana bread delivers a taste experience reminiscent of a classic white bread, yet with a distinctive Greek flavour profile. Its inherent savoriness is elevated by the addition of sesame seeds, giving a crunchy finish to this otherwise gently yielding bread. While delicious on its own, Lagana is versatile enough to integrate seamlessly into meals, working just as well alongside hearty stews as it does with fresh salads.

Possible Pairings

If you’re searching for dishes to pair with your freshly baked Lagana, Greek cuisine offers a smorgasbord of enticing options. This bread is particularly delicious when served with traditional dips such as Baba Ganoush, Hummus, or a classic Tzatziki. It also pairs perfectly with Greek salad, dolmades, or as a satisfying accompaniment to a traditional Moussaka. However, don’t feel confined to Greek cuisine – the universal appeal of a good flatbread such as Lagana means its potential pairings reach well beyond the shores of the Aegean Sea.

Baking Your Own Lagana

If all this talk of Lagana has sparked your curiosity, why not try baking your own? The list of needed ingredients is surprisingly short and probably already in your pantry. With a bit of time and patience, anyone can bring this ancient Greek tradition into their kitchen. The resulting taste and texture will be reward enough for your efforts, but the act of recreating such a storied recipe offers its own satisfaction. Enjoy the process, and most importantly, enjoy your homemade Lagana!

What You’ll Need

  • 1 pack of Active Dry Yeast (around 2 1/4 teaspoons)
  • 1 1/2 cups of Warm Water
  • 1 teaspoon of Sugar
  • 4 1/2 cups of All-Purpose Flour
  • 1/2 teaspoon of Salt
  • 1/4 cup of Olive Oil
  • 2 tablespoons of Sesame Seeds
ALLERGENS: Active Dry Yeast, All-Purpose Flour, Sesame Seeds

Method

Step One

Start off by dissolving the active dry yeast and sugar in the warm water. Let it sit for about 10 minutes until it becomes frothy and active.

Step Two

In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Step Three

Using a spoon, gradually mix the flour with the liquid ingredients until a dough starts to form. OR transfer everything to a mixer fitted with the hook attachment and mix for a couple of minutes until a dough forms.

Step Four

Knead the dough on a floured surface until it’s smooth and elastic, about 10 minutes. If you’re using a mixer, knead at low speed for about 8-10 minutes.

Step Five

Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm environment until it doubles in size, about 1 hour.

Step Six

Preheat your oven to 375°F (190°C). Deflate the dough gently, then transfer it to a greased baking sheet. Stretch it out to cover the entire size of the sheet.

Step Seven

Brush the surface of the dough with water and sprinkle the sesame seeds evenly over it. Press them slightly with your hands to ensure they stick to the dough.

Step Eight

Bake in the preheated oven for about 30-40 minutes, until the bread is golden brown. Let it cool on a wire rack. Your delicious lagana is ready to serve.
