What You’ll Need

  • 6 boneless skinless chicken breasts, filleted and pounded thin

  • 1/2 cup of unsalted butter
  • 5 tablespoons of extra-virgin olive oil
  • 1 cup of fresh lemon juice
  • 1/2 cup of chicken stock
  • 1/4 cup of brined capers, rinsed
  • 1/3 cup of fresh parsley, chopped
  • Salt, to taste

Method

Step One
