What You’ll Need

  • 2 pounds of small yellow potatoes
  • 3 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • Zest and juice of 2 lemons
  • 1/4 cup of chopped fresh herbs (like rosemary, thyme, and parsley)
  • Salt and pepper to taste
  • 1 teaspoon of red pepper flakes (optional)
ALLERGENS:

Method

Step One

Preheat your oven to 400 degrees Fahrenheit. Meanwhile, wash the small yellow potatoes thoroughly and pat them dry. Cut the larger ones in half for uniformity.

Step Two

In a large bowl, bring together 3 tablespoons of olive oil, minced cloves of garlic, the zest and juice of 2 lemons. Mix well until they are perfectly combined.

Step Three

Add the potatoes into the lemon and olive oil mixture. Stir them well to ensure they are fully coated. Then, add 1/4 cup of freshly chopped herbs. Salt and pepper should be added according to your taste. If you enjoy a little bit of heat, you can also add 1 teaspoon of red pepper flakes. Mix all these ingredients well.

Step Four

Arrange the potatoes in a single layer on a baking sheet, ensuring there is a little space between them for even roasting. Pour any oil or herb mixture left in the bowl over the top.

Step Five

Put the baking sheet into the preheated oven and roast the potatoes for about 30 to 40 minutes, until they are golden brown and crispy. During the baking time, flip the potatoes once or twice for even color and crispness.

Step Six

Once done, remove the potatoes from the oven and let them cool for a few minutes. After that, they’re ready to serve! These lemon herb roasted potatoes make an excellent side dish for a wide variety of meals.
