What You’ll Need

  • 1 lb spaghetti or linguine
  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • 1 tablespoon lemon zest
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional for garnish)
  • 1/4 cup toasted pine nuts (optional for garnish)

Method

Step One

Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water.

Step Two
