What You’ll Need

  • 2 cups lentils
  • 6 cups water
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 1 bunch fresh parsley, chopped
ALLERGENS: The recipe does not appear to contain common allergens. However, people can be allergic to almost anything. Someone with specific allergies to lentils, garlic, carrots, celery, bell pepper, tomatoes, bay leaves, thyme, paprika, black pepper, vegetable oil, vinegar, or parsley should avoid this recipe.

Method

Step One

Begin by rinsing the lentils under cold water, then drain. Place the lentils in a large pot, add 6 cups of water, and bring to a boil over high heat.

Step Two

While the lentils are cooking, heat the vegetable oil in a large frying pan over medium heat. Add the chopped onion, garlic, carrots, celery, and bell pepper. Cook until softened, about 10 minutes.

Step Three

Add the cooked vegetables to the pot with the lentils. Then, add the diced tomatoes, bay leaves, thyme, paprika, salt, and pepper. Stir well to combine. Reduce heat to low, cover the pot, and let simmer for about an hour or until the lentils are tender.

Step Four

Once the lentils are tender, remove the bay leaves. Stir in the vinegar and adjust the seasonings if necessary. Let the stew continue to simmer for another 10 minutes.

Step Five

Before serving, stir in the chopped fresh parsley. Enjoy your hearty Lentil Stew warm.
