The Loganberry and Apple Crumble is a dish that I hold dear to my heart. This sweet treat is a luscious mishmash of tart loganberries and crisp apples, all topped with a crunchy oat crumble. Its flavor profile is a wonderful balance between mouth-puckering tang and satisfying sweetness, a perfect ending to hearty mountain fare meals. Growing up in the Rockies, I used to pluck ripe loganberries that grew along the nearby woodland trails, and this dessert always brings me back to those fond childhood memories. Great complementing beverages to this crumble could be a sparkling apple cider or a robust dark roast coffee
Mountains of Hearty Flavours
The combination of loganberries and apples in this crumble brings a vibrant burst of flavors in every bite. These fruits, besides being delicious, are also chock-full of essential nutrients. Loganberries, in particular, are rich in antioxidants and fiber, while apples carry a good amount of vitamin C. The crumbly topping, made from a blend of all-purpose flour and rolled oats, adds a delightful texture that contrasts beautifully with the softened fruit beneath. This crumble is reminiscent of a classic French cherry clafoutis but with a rustic, robust twist that reflects my Colorado Rockies upbringing.

- 1 cup of granulated sugar
- 1 tablespoon of lemon juice
- 1 cup of all-purpose flour
- ⅔ cup of rolled oats
- ½ cup of light brown sugar
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of salt
- 8 tablespoons of unsalted butter, cut into small pieces
- 1 teaspoon of vanilla extract
Method
Step One
Preheat the oven to 375 degrees. After that, prepare a 9×13 inch baking dish by lightly greasing it.
Step Two
Rinse the fresh loganberries and 3 medium-sized apples under cold water. After, chop the apples into small pieces.
Step Three
In a large bowl, combine the loganberries, apples, ½ cup of granulated sugar, and 1 tablespoon of lemon juice. Stir until the sugar is fully dissolved. Pour the mixture into the prepared baking dish.
Step Four
In a separate bowl, combine the 1 cup of all-purpose flour, ⅔ cup of rolled oats, ½ cup of light brown sugar, ½ teaspoon of ground cinnamon, and ¼ teaspoon of salt. Mix well to combine.
Step Five
Add 8 tablespoons of unsalted butter cut into small pieces and 1 teaspoon of vanilla extract to the flour mixture. Combine using a pastry cutter or your fingers until the mixture resembles coarse breadcrumbs.
Step Six
Scatter the crumble mixture over the fruit in the baking dish, covering as much of the fruit surface as possible.
Step Seven
Bake the crumble in the preheated oven for about 40-45 minutes or until the topping is golden brown and the fruit is bubbling.
Step Eight
Remove the crumble from the oven and allow to cool for a few minutes before serving.
