What You’ll Need
- 1 cup of Magellan Barberries
- 1 cup of Honey
- 2 cups of Almonds
- 3 tablespoons of Lemon Juice
- 1 teaspoon of Cinnamon
Method
Step One
First of all, take a bowl and add 1 cup of Magellan Barberries. Rinse them properly under cold water and make sure to remove any stems or debris.
Step Two
In the meantime, take 2 cups of Almonds and crush them coarsely using a food processor or mortar and pestle. Make sure you don’t make a fine powder, rather than that you want a coarsely crushed texture for this recipe.
Step Three
Add the crushed Almonds into the bowl of barberries. Mix them well so that the Almonds are evenly distributed amongst the Barberries.
Step Four
Now, heat up 1 cup of Honey in a saucepan over medium heat. Once the honey is hot, reduce the heat and add the Almonds and Barberries mixture into the hot honey.
Step Five
Mix the ingredients thoroughly so that the Almonds and Barberries are glazed with the Honey. Let the mixture cook on low heat for about 10 minutes.
Step Six
After 10 minutes, add 3 tablespoons of Lemon Juice and 1 teaspoon of Cinnamon to the mixture. Stir well so that the flavors can combine.
Step Seven
Keep stirring the mixture on low heat for another 5 minutes after adding the Lemon Juice and Cinnamon. Then, turn off the heat and let the mixture cool.
Step Eight
Once the mixture has cooled, spread it out on a tray lined with parchment paper and let it set at room temperature. Once set, cut the barberries, almonds and honey mix into bars and enjoy!
