Delicious Marionberry Pancakes

A Pancake Packed with Benefits

It’s great when a favorite dish also comes with an array of health benefits. Marionberries, a type of blackberry native to Oregon, happen to be a great source of vitamins A and C – both of which boost our immune system. They also contain plenty of antioxidants that fight off harmful free radicals. These beauties have a sweet-tart taste that works wonders with the fluffy, buttery pancakes. Delicious and nutrition-packed, Marionberry Pancakes are a wonderful way to start your day.

Think Outside the Stack

While Marionberry Pancakes make a terrific breakfast or brunch on their own, they also pair wonderfully with other dishes. Serve alongside classic Southern grits for a truly hearty start to your day, or couple them with a serving of fresh fruit salad for a complete, balanced meal. And if you’re in a savoury mood, why not enjoy these pancakes with Southern staples like fried chicken or fresh biscuits? Creating a diverse palette of flavors in one meal has never been easier.

Whether you’re a pancake enthusiast or just a fan of good food, these Marionberry Pancakes are a recipe you’ll want to keep. The next time you’re looking to spruce up your breakfast or brunch, remember this delightful, fruit-infused Southern twist on a classic dish.

What You’ll Need

  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh marionberries
  • Maple syrup, for serving
ALLERGENS: Wheat, Milk, Eggs

Method

Step One

Start by combining your dry ingredients in a large bowl. This includes the 2 cups of all-purpose flour, 2 tablespoons of white sugar, 2 teaspoons of baking powder, 1 teaspoon of baking soda and a 1/4 teaspoon of salt. Stir until fully mixed.

Step Two

In a separate bowl, combine your wet ingredients. Crack open and add the 2 large eggs. Pour in the 2 cups of buttermilk, 1/4 cup of melted unsalted butter, and 1 teaspoon of vanilla extract. Stir all the ingredients together until they are well combined.

Step Three

Slowly whisk in your wet mixture into the dry mixture. Make sure to stir well, you want the batter to be thoroughly mixed and smooth.

Step Four

Gently fold in the 1 cup of fresh marionberries into the batter. Be careful not to overmix as this can crush the berries and change the color and texture of your pancakes.

Step Five

Preheat your griddle or pancake pan over medium heat. Once preheated, ladle your pancake batter onto the surface, using about 1/4 cup for each pancake.

Step Six

Cook the pancakes for about 2-3 minutes on each side, or until they are golden brown. Make sure to flip them when the batter starts to bubble on top and the edges look slightly dry, that’s when you know they’re ready.

Step Seven

Serve your delicious marionberry pancakes warm with a generous drizzle of maple syrup.
