What You’ll Need

  • 1 cup of sugar
  • 1/2 cup of water
  • 4 cups of fresh marionberries
  • 1/4 cup of fresh lemon juice

Method

Step One

Combine 1 cup of sugar and 1/2 cup of water in a medium saucepan. Heat the mixture over a medium flame, stirring until the sugar is fully dissolved. This creates a simple syrup.

Step Two

Take your 4 cups of fresh marionberries and add them to the saucepan. Gently simmer the berries in the simple syrup for about five minutes, or until they have broken down and released their juices.

Step Three

Using a blender or food processor, puree the marionberry mixture until it reaches a smooth consistency. If desired, you can strain the mixture through a fine mesh sieve to remove seeds.

Step Four

Add the 1/4 cup of fresh lemon juice to the marionberry puree, stirring to combine. The citrus will help to balance the sweetness of the berries and sugar.

Step Five

Chill the marionberry mixture in your refrigerator until it is completely cool. This will take at least 3 hours, but it can also be left overnight.

Step Six

Once the mixture is chilled, transfer it to an ice cream maker. Follow the manufacturer’s instructions for your specific model to churn the sorbet, which typically takes about 15-20 minutes.

Step Seven
