What You’ll Need
- 1 pound ground pork
- 1 pound ground beef
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 4 carrots, diced
- 2 celery stalks, diced
- 10 cups water
- 2 tablespoons tomato paste
- 1/2 cup rice
- 2 eggs
- 3 tablespoons breadcrumbs
- 4 cloves of garlic, minced
- 2 fresh parsley sprigs, chopped
- Salt and pepper to taste
- 2 tablespoons chopped fresh dill
- 1 tablespoon white vinegar
- Sour cream for serving (optional)
Method
Step One
In a large bowl, combine the ground pork and ground beef. Add in the rice, eggs, breadcrumbs, minced garlic, chopped parsley, and a dash of salt and pepper. Mix everything together until well combined. Shape the mixture into small meatballs about 1-inch in diameter.
Step Two
Heat the vegetable oil in a large pot over medium heat. Add the finely chopped onions, diced carrots, and diced celery to the pot. Cook, stirring occasionally, until the vegetables are softened and the onions turn translucent.
Step Three
Add the water and tomato paste to the pot with the vegetables. Stir until the tomato paste is well incorporated. Bring the mixture to a boil.
Step Four
Reduce the heat to low, then gently add the meatballs to the pot. Let the soup simmer for about 30 minutes, or until the meatballs are cooked through.
Step Five
While the soup is simmering, chop the fresh dill. Once the meatballs are cooked, add the freshly chopped dill and white vinegar to the pot. Stir to combine, then let the soup continue to simmer for another 10 minutes.
Step Six
