If there’s a dish that wonderfully encapsulates my penchant for combining diverse culinary styles, it’s the Mint and Currant Couscous. This delightful fruit-based creation brings together the vibrant flavors of the Mediterranean with a subtle hint of sweetness that complements them superbly.
The Taste Adventure
Every bite of Mint and Currant Couscous serves as a palette adventure. The mild, nutty flavor of couscous, with its Mediterranean origins, does a grand dance with the tartness of dried currants and the sweetness of the orange juice and zest. It is then topped with the refreshing essence of chopped mint and balanced by the mellow tones of olive oil.
Inspired by my French ancestry, I’ve diligently prepared it time and again, experimenting with its elements and bringing forth a harmony that embodies the elegance of French desserts. It also pays homage to my Louisiana roots with its fruity zest echoing the effervescent Creole vibe. Similar to the French Couscous with Pine Nuts dish, this version takes on a sweeter note that complements a wide variety of savory dishes.
Health Benefits and Flavor Complement
Aside from being a gastronomic delight, Mint and Currant Couscous offers several health benefits. Owing to its main ingredient, couscous, it packs a good deal of protein and fiber, vital for digestion and overall health. The orange juice and zest provide necessary Vitamin C, while the currants are a veritable source of antioxidants and fiber. The addition of mint not only lends a refreshing aftertaste but also aids digestion.
This dish works well as a side to a hearty roast or as a standalone star for a lighter meal. Consider pairing it with a nicely roasted chicken or a sumptuous Lamb Tagine. The sweetness of the couscous perfectly complements the savory flavors, elevating the dining experience to another level.
What You’ll Need
- 1.5 cups of couscous
- 2 cups of boiling water
- 1/2 cup of dried currants
- 1/2 cup of freshly squeezed orange juice
- Zest of one orange
- 1/4 cup of chopped fresh mint
- 1 tablespoon of olive oil
- A pinch of salt
- A dash of pepper
Method
Step One
Start by boiling the 2 cups of water in a pot. Once the water reaches boiling point, pour it over the 1.5 cups of couscous in a heatproof bowl. Cover the bowl with a cloth or lid and let the couscous sit for about 10 minutes so it can absorb the water completely.
Step Two
In a separate bowl, combine 1/2 cup of dried currants with 1/2 cup of freshly squeezed orange juice. Allow the currants to soak in the juice for the same time the couscous is absorbing the water. This will help plump up the currants and infuse them with the orange juice’s flavor.
Step Three
After 10 minutes has passed, fluff the couscous gently with a fork to separate the grains. Ensure it’s fully cooked and has fully absorbed all the boiling water.
Step Four
Add the soaked currants along with the juice, zest of one orange, 1 tablespoon of olive oil and 1/4 cup of chopped fresh mint to the couscous. Mix these ingredients into the couscous until evenly distributed.
Step Five
Finally, season your couscous with a pinch of salt and a dash of pepper. Toss everything together one last time to make sure the seasoning is well-distributed throughout. Taste the couscous and adjust the seasoning, if required.
Step Six
Your Mint and Currant Couscous is now ready to serve! This dish works great as a light lunch, the grain element in a salad, or as a side to your main course.
