I have a soft spot in my heart for the fruitier, sweeter side of the culinary world and our Miracle Berry Cheesecake is no exception. I believe a good cheesecake can work marvels at fostering connections, evoking memories, and even transforming a mundane afternoon into something truly special. This particular cheesecake, with its hint of Irish tang from the blended cream cheese and sour cream, and a crisp crust of crushed graham crackers, speaks volumes about my roots and affinity for comfort food.

Miracle Berry Cheesecake

A Culinary Masterpiece

The Miracle Berry Cheesecake, besides being an absolute treat to the taste buds, also carries a significant serving of health benefits. The combination of cream cheese and eggs provides a good amount of protein, while the miracle berries themselves are an interesting ingredient, known for their magical ability to make sour foods taste sweet. Research also suggests that these small, red gems may have antioxidant properties and may even be beneficial for those with diabetes. Lastly, I can’t ignore the fact that the lemon zest in this recipe adds a bright note that not only elevates the flavor but also introduces a wealth of Vitamin C.

Complex Tastes, Simple Steps

Just like traditional New England seafood dishes, or my grandmother’s beloved shepherd’s pie, this cheesecake is deceptively easy to prepare. All that’s needed is pure vanilla extract, a little bit of sugar, unsalted butter, and the right proportions. I find that making it allows me to create not only an indulgent dessert, but also a form of edible art. Each layer, each flavor, and each texture is a testament to how something so simple can become incredibly compelling.

In terms of pairings, my Miracle Berry Cheesecake goes wonderfully well with a crisp, citrusy white wine or even a cup of strong Irish tea. For those who prefer to pair dessert with another sweet treat, a serving of berry sorbet or a hot Irish coffee can complement the cheesecake’s creamy texture and zesty flavor notes.

Similar in essence to a classic New York cheesecake but with an Irish-American twist, my Miracle Berry Cheesecake confirms my belief in the power of food as a medium to express love and heritage. Whether you’re celebrating a special occasion, or just need a sweet pick-me-up, this cheesecake is sure to do the trick.

In essence, this Miracle Berry Cheesecake is more than just a recipe. It’s a tribute to my heritage, to my love for Laura and our baby boy, and to every person who’s helped shape my passion for food. And that, to me, is the real miracle.

What You’ll Need

  • 1.5 cups crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup melted unsalted butter
  • 2 cups cream cheese
  • 1/2 cup sour cream
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 cup fresh miracle berries
  • 1/2 cup powdered sugar
ALLERGENS: wheat, dairy, eggs

Method

Step One

Preheat your oven to 350°F (175°C). While the oven is heating, combine the crushed graham crackers, 1/4 cup of sugar, and the melted unsalted butter in a bowl. Stir the mixture until all the crumbs are moistened and it sticks together.

Step Two

Press this mixture into the bottom of a 9-inch springform pan to create the cheesecake crust. Place the pan in the oven and bake for about 10 minutes or until the crust is set. Remove the crust from the oven and allow it to cool down.

Step Three

In a larger bowl, beat together the cream cheese, sour cream, and the 3/4 cup of sugar using an electric mixer. Keep mixing until the mixture is smooth and creamy.

Step Four

Next, beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next. After the eggs, add the vanilla extract, salt, and lemon zest. Mix everything together until well combined.

Step Five

Spread the cream cheese mixture over the cooled crust in the springform pan. Then, evenly sprinkle the fresh miracle berries on top of the cream cheese layer.

Step Six

Bake the cheesecake in the preheated oven for about 50 minutes or until the center is set and the top is lightly browned. You may wish to place a baking sheet under the pan to catch any drips.

Step Seven

Allow the cheesecake to cool in the pan on a wire rack for 10 minutes. Then, carefully remove the sides of the pan and allow the cheesecake to cool completely.

Step Eight

Before serving, sift the powdered sugar over the top of the cheesecake for a touch of extra sweetness. Enjoy your Miracle Berry Cheesecake!
