What You’ll Need

  • 6 chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground coriander
  • 2 teaspoons cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup pitted green olives
  • 1 cup pitted and chopped dates
  • 2 cups chicken broth
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Cilantro, for garnish
  • Flaked almonds, for garnish

Method

Step One

Season the chicken thighs with salt and pepper. Heat the olive oil in a large pan over medium heat. Once the oil is hot, add the chicken thighs and cook until browned on both sides. Remove the chicken from the pan and set aside.

Step Two

In the same pan, add the finely chopped onion and sauté until it becomes translucent. Add the minced garlic and sauté for another minute until fragrant.

Step Three

Add the ground coriander, cumin, turmeric, cinnamon, and ground ginger to the pan. Stir well to combine the spices with the onion and garlic.

Step Four

Return the chicken thighs to the pan, then add the pitted green olives, chopped dates, and chicken broth. Stir well to combine and ensure that the chicken is well coated in the spice mixture.

Step Five

Reduce the heat to low, cover the pan, and let the mixture simmer for about 20 minutes, or until the chicken is cooked through.

Step Six

Stir in the honey and lemon juice. Taste the sauce, adding more salt and pepper if needed.

Step Seven
