What You’ll Need

  • 2 cups mouse melon, halved
  • 2 cups pasta, cooked
  • 1 cup strawberries, hulled and quartered
  • 2 peaches, peeled and chopped
  • 1/2 cup red onions, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Method

Step One

Start by halving the 2 cups of mouse melon. Also, make sure your 2 cups of pasta is cooked before moving on to the next step.

Step Two

Take your strawberries and hull them, then quarter these. Also, peel and chop your 2 peaches. This gives the salad a wonderful, fruity flavor.

Step Three

Finely chop 1/2 cup of red onions. Too much can overbear the salad, so use sparingly.

Step Four

Now let’s add some herbs. Take your fresh basil leaves and mint leaves and chop until you have 1/4 cup of each. The fresh herbs give a refreshing taste to the salad.

Step Five

In a separate bowl, combine 3 tablespoons of olive oil, 1 tablespoon of lemon juice and 1 tablespoon of honey. This will serve as the dressing for the pasta salad.

Step Six

Combine the mouse melon, cooked pasta, strawberries, peaches, red onion, basil and mint leaves in a large bowl. Toss lightly to mix these together.

Step Seven

Pour the dressing over the salad and toss again to ensure the ingredients are well coated.

Step Eight

Season the salad with the desired amount of salt and pepper to your liking.
