  • 2 tablespoons tomato paste
  • 1 tablespoon light soy sauce
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Garlic Mashed Potatoes:

  • 3 lbs Yukon Gold Potatoes
  • 8 cloves garlic, peeled
  • 1 cup warm milk
  • 6 tablespoons unsalted butter
  • Salt to taste
  • 2 tablespoons chopped fresh chives (for garnish)

Method

Step One:

First, you’ll need to prepare your ingredients. For the mushroom goulash, slice the 2 lbs of mixed mushrooms and chop the 3 large onions. The 5 cloves of garlic should be minced and the paprika, caraway seeds, vegetable broth, tomato paste, soy sauce, and salt and pepper should be measured out. For the garlic mashed potatoes, peel the garlic cloves and chop the chives.

Step Two:

In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the onions and garlic, sautéing until the onions become translucent. Then, add the mushrooms and cook until they’re browned.

Step Three:

Now it’s time to add the spices. Stir in the 3 tablespoons of sweet paprika and 1 tablespoon of caraway seeds until the onions and mushrooms are fully coated. Mix in the 2 tablespoons of tomato paste and add the vegetable broth. At this stage, you can also add the soy sauce and season the goulash with salt and pepper to taste.

Step Four:

Reduce the heat and simmer the goulash for about 30 minutes, until the flavors meld and the broth reduces slightly.

Step Five:

While the goulash is cooking, you can start on the garlic mashed potatoes. Begin by placing the potatoes and peeled garlic cloves in a large pot. Cover the ingredients with water and bring to a boil over high heat. Once boiling, reduce the heat and simmer until the potatoes are tender.
