What You’ll Need
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 large eggs
- 1 cup mashed ripe papaya
- 1/2 cup unsweetened shredded coconut
- 1/2 cup melted unsalted butter
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped walnuts (optional)
Method
Step One
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9×5 inch loaf pan.
Step Two
In a large bowl, combine the flour, sugar, baking soda, salt, cinnamon and nutmeg. In a separate bowl, beat the eggs.
Step Three
To the beaten eggs, add the mashed papaya, shredded coconut, melted butter and vanilla extract. Mix well until all the ingredients are well incorporated.
Step Four
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. If using, fold in the chopped walnuts.
Step Five
Pour the batter into the prepared pan and smooth the top with a spatula.
Step Six
Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Step Seven
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
