What You’ll Need

  • 1 large ripe papaya (about 1.5 to 2 pounds)
  • 1 cup water
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest (optional)
  • Pinch of salt

Method

Step One

Peel and seed the papaya. Cut the flesh into chunks. You should have about 4 cups of papaya pieces.
