What You’ll Need

  • 6 large egg whites
  • 1.5 cups of caster sugar
  • 1 teaspoon of white vinegar
  • 1.5 teaspoons of cornstarch
  • 1 teaspoon of pure vanilla extract
  • 1 cup of heavy cream
  • 2 tablespoons of confectioners’ sugar
  • 6 ripe passion fruits
  • Fresh berries for garnish (optional)

Method

Step One

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper. Set aside.

Step Two

In a large bowl, beat the egg whites until they form soft peaks. This should take about 1-2 minutes using an electric mixer on high speed.

Step Three

Gradually add in the caster sugar, one tablespoon at a time, while continuing to beat the egg whites. The mixture should be thick and glossy.

Step Four

Pour in the white vinegar, cornstarch, and vanilla extract while continuing to whisk the mixture. Beat until all ingredients are fully combined.

Shape the mixture into a round pavlova shape on the lined baking sheet. Make an indentation in the center leaving the edges higher to hold the filling. Bake for about 1 hour until it becomes crisp and slightly golden.

Step Six

Once done, turn off the oven and let the pavlova cool completely inside. This process helps prevent the pavlova from cracking.

Step Seven

Meanwhile, whip the heavy cream and confectioners’ sugar until it forms soft peaks. Scoop out the pulp from the passion fruits and set it aside.

Step Eight

Once the pavlova is fully cooled, remove it from the oven. Top it with the whipped cream, followed by the passion fruit pulp, and garnish with fresh berries if you like. Serve right away and enjoy!
