What You’ll Need

  • 1 cup of granulated sugar
  • 1 tsp of baking powder
  • 3 cups of all-purpose flour
  • 1 cup of cold unsalted butter (2 sticks)
  • 1 egg
  • 1/4 teaspoon of salt
  • 1 pinch of ground cinnamon (optional)
  • 4 cups of fresh peeled peaches
  • 1/2 cup of granulated sugar
  • 4 tsp of cornstarch
  • 1 tablespoon of lemon juice
ALLERGENS: Wheat, Milk, Egg

Method

Step One

Start by preheating your oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.

Step Two

In a medium bowl, blend together 1 cup of granulated sugar, 3 cups of all-purpose flour, a teaspoon of baking powder, a 1/4 teaspoon of salt and a pinch of cinnamon. Use a fork or pastry cutter to blend in the cold unsalted butter and egg. Dough will be crumbly. Press half of the dough into the prepared pan.

Step Three

In another bowl, stir together 1/2 cup of sugar and cornstarch. Mix in the peeled peaches and lemon juice. Sprinkle the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer.

Step Four

Bake in preheated oven for 45 minutes, or until the top is slightly golden. Allow to cool completely before cutting into bars and serving.
