ALLERGENS: Dairy, Eggs, Wheat, Gluten

Method

Step One

Melt the unsalted butter in a non-stick pan over medium heat. Add the slices of smoked ham to the pan, cooking until they become crispy.

Step Two

In a separate bowl, whisk the large, fresh chicken eggs. Add salt and pepper to taste, then set this mixture aside for now.

Step Three

Pour your crepe batter into a separate non-stick pan over medium heat. Spread the batter out evenly to ensure your crepe cooks evenly.

Step Four

Once your crepe is golden brown on one side, flip it over to cook the other side. When the other side is cooked, add a slice of Swiss cheese on one half of the crepe.

Step Five

Add two tablespoons of heavy cream over the cheese. Fold the crepe in half, covering the cheese and cream. Repeat this process until you have used up all your batter, cheese and cream.

Step Six

Finally, pour your whisked egg mixture into a pan over medium heat. Scramble the eggs until they are fully cooked.

Step Seven

Place the cooked crepes on a serving platter. Top each crepe with an equal portion of scrambled eggs, then sprinkle the finely chopped fresh chives on top for garnish. Your “Picardy String” is ready to be served. Enjoy!
