What You’ll Need
- 3 cups of cooked, chilled jasmine rice
- 2 tablespoons of vegetable oil
- 1 cup of diced fresh pineapple
- 1/2 cup of diced red bell pepper
- 1/2 cup of diced green bell pepper
- 1 cup of frozen peas
- 1 small onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 eggs, lightly beaten
- 1/3 cup of unsalted cashews, chopped
- 3 tablespoons of soy sauce
- 2 green onions, thinly sliced
- 1/2 teaspoon of crushed red pepper flakes (optional)
Method
Step One
Set a large wok or skillet over medium-high heat and add 2 tablespoons of vegetable oil. Once heated, add the finely chopped onion and garlic. Cook until they are softened and aromatic.
Step Two
Add in the diced fresh pineapple, red and green bell peppers into the pan. Cook for about five minutes, or until the pineapple is browned and caramelized.
Step Three
Push all the cooked ingredients to one side of the pan and pour the two lightly beaten eggs into the other side. Scramble the eggs and cook until they are done.
Step Four
Add the 3 cups of chilled jasmine rice, cup of frozen peas, 1/3 cup of unsalted cashews, and 3 tablespoons of soy sauce to the pan. Stir fry the mixture, ensuring everything is evenly mixed and the rice is warmed through.
Step Five
