If food is love, then my Pineberry Pancakes are a hearty declaration of affection. Growing up in the sun-soaked fields of California melded effortlessly with my Gujarati roots, inspiring me to bring together the best of both worlds. These fruit-infused pancakes manage to capture the sunny essence of the West Coast while hinting at the vibrant and rich flavors of Indian cuisine, all in one bite. What’s more, they combine nourishment and indulgence, giving those who eat them an indulgent breakfast option that packs in a punch of health benefits. But it isn’t just the fusion of cultures that make this recipe close to my heart, there are so many other reasons why I love the Pineberry Pancakes.

Pineberry Pancakes

The Magic of Fusion Cuisine

Besides warming our kitchen with an appetizing aroma, the Pineberry Pancakes occupy a special spot in my heart for being a melting pot of cultures. From breakfast burritos to avocado toast, California has always been at the forefront of inventive breakfast dishes. When I got married and introduced Faisal to these classic Californian dishes, I also took the opportunity to explore his Indian roots through his favorite breakfasts. The pancakes reflect this shared culinary journey, infusing the American staple with sweet pineapple—a nod to Gujarati summer fruit salads—and strawberries for a burst of California freshness. This recipe will remind you of a classic strawberry pancake, but with an unexpected, tropical twist.

The Power of Healthy Indulgences

We all know the saying “breakfast is the most important meal of the day”, but it doesn’t mean we have to sacrifice taste for health benefits. The Pineberry Pancakes are a testament to this. These pancakes are like edible sunshine on a plate, packed with the immunity-boosting power of fresh fruits. Pineapples, known for their high vitamin C content and benefits for digestion, and strawberries, a fantastic source of antioxidants, together make these pancakes a powerhouse of nutrients. And let’s not forget the goodness of buttermilk and eggs added to the mix, making these pancakes high in protein. The white chocolate chips add just a touch of indulgence, rounding out the taste perfectly.

These pancakes are fantastic on their own, but they also pair deliciously well with a simple omelette or a rich French toast, bringing balance to a complete breakfast spread. Whether you’re introducing your family to new flavors or simply relishing in the joy of creating something deliciously different, my Pineberry Pancakes will always rise to the occasion!

What You’ll Need

  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/4 cup melted unsalted butter
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh pineapple, diced
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips
  • Butter or oil for the frying pan
  • Maple syrup for serving
ALLERGENS: Wheat, Milk, Eggs

Method

Step One

In a large bowl, combine the all-purpose flour, white sugar, baking powder, baking soda, and salt. Mix these dry ingredients until they are thoroughly combined.

Step Two

In another bowl, whisk together the buttermilk, melted unsalted butter, eggs, and pure vanilla extract. Ensure these are combined well and that the egg is fully incorporated into the mixture.

Step Three

Slowly add the dry ingredient mixture into the wet ingredient mixture, stirring as you go. Mix until just combined – be careful not to overmix as this can lead to tough pancakes.

Step Four

Add the diced pineapple, diced strawberries, and white chocolate chips into the pancake batter. Fold these ingredients into the batter, ensuring they are distributed evenly throughout.

Step Five

Heat your pan over medium heat and add a little butter or oil to prevent the pancakes from sticking. Once the pan is hot, pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Step Six

Once the pancakes are cooked, serve them warm with a drizzle of maple syrup. Enjoy your Pineberry Pancakes!
