What You’ll Need
- 1.5 cups of water
- 1.5 cups of granulated sugar
- 1 cup of fresh pineapple juice
- 1 cup of fresh strawberry juice
- 2 tablespoons of lemon juice
- 1/4 teaspoon of salt
- Fresh mint leaves for garnish
Method
Step One
Combine the water and granulated sugar in a saucepan over medium heat. Stir the mixture until the sugar dissolves completely. After the sugar has dissolved, remove the saucepan from heat and allow it to cool to room temperature.
Step Two
While the sugar water cools, prepare your juices. Ensure you have one cup of fresh pineapple juice and one cup of fresh strawberry juice. You can either buy these from the store or make them at home by pureeing the fruit in a blender and straining it to remove the pulp.
Step Three
Combine the cooled sugar water, pineapple juice, strawberry juice, lemon juice and salt in a large bowl. Stir this mixture thoroughly to ensure everything is evenly mixed together.
Step Four
Pour the mixture into an ice cream maker and churn following the manufacturer’s instructions. If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer, stirring every 30 minutes until it reaches the desired consistency.
Step Five
Once the sorbet has been churned, you can either serve it immediately for a softer consistency or transfer it to a lidded container and freeze it for 2-3 hours for a firmer sorbet.
Step Six
When you’re ready to serve the Pineberry Sorbet, scoop it into bowls or glasses and garnish each serving with a few fresh mint leaves for an added touch of color and refreshing flavor.
