What You’ll Need

  • 2 large pomelos
  • 1 cup of white sugar
  • 1 cup of water
  • 1 bunch fresh mint
  • Juice of 1 lemon
  • 1 teaspoon of lemon zest

Method

Step One

Start by squeezing the juice from the 2 large pomelos into a bowl. Make sure to remove any seeds that may fall in. Set aside the pomelo juice for later.

Step Two

In a saucepan over medium heat, combine the 1 cup of white sugar and 1 cup of water. Stir until the sugar has completely dissolved. Let it cool for a few minutes.

Step Three

Once the sugar-water mixture has cooled down a bit, add the juice from the pomelos and from the lemon into the saucepan. Stir well until everything is nicely combined.

Step Four

Rinse the fresh mint and pat it dry with a kitchen towel. Chop it finely and then add it to the saucepan. Follow this by adding in the teaspoon of lemon zest. Stir well to ensure the flavors mix correctly.

Step Five

Pour the mixture from the saucepan into an ice cream maker. If you don’t have one, you can pour it into a shallow dish and place in the freezer, making sure to stir it every half hour or so to get a smooth texture.

Step Six

Let the sorbet freeze completely. This usually takes about 2 to 3 hours if using an ice cream maker, or 4 to 6 hours if freezing manually.
