What You’ll Need

  • 2 pounds of pork tenderloin, cut into 1-inch cubes
  • 1/3 cup of olive oil
  • 1/4 cup of fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon of dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 bell peppers, cut into 1-inch pieces
  • 2 red onions, cut into 1-inch pieces
  • 6 wooden or metal skewers

Method

Step One

Take a large bowl and add 2 pounds of pork tenderloin cut into 1-inch cubes.

Step Two

In the same bowl, pour 1/3 cup of olive oil, 1/4 cup of fresh lemon juice, minced garlic cloves, 1 tablespoon of dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Step Three

Toss the pork cubes thoroughly until they are well coated with the oil and spices.

Step Four

Cover the bowl and let it marinate for at least 1 hour, or overnight if time allows.

Step Five

Preheat your grill to medium heat and clean the grates.

Step Six

Take the wooden or metal skewers and thread the pork cubes onto them alternately with 1-inch pieces of bell peppers and red onions.

Step Seven

Place the skewers on the grill. Cook for about 10-15 minutes, turning once, until the pork is cooked thoroughly and the veggies are tender.
