What You’ll Need

  • 2 cups of pitted prunes
  • 2 cups of fresh raspberries
  • 3 cups of granulated sugar
  • 1/4 cup of lemon juice
  • 1 packet (1.75 oz) of fruit pectin
  • 1/2 cup of water

Method

Step One

Begin by thoroughly washing the prunes and raspberries. Once clean, remove the pits from the prunes and then roughly chop them. Set these aside for now.

Step Two

In a large pot, combine the chopped prunes, raspberries, sugar, and lemon juice. Stir everything together until well combined. Make sure to keep the heat at medium and stir occasionally to prevent the mixture from burning.

Step Three

In a small bowl, mix together the fruit pectin with 1/2 a cup of water until it dissolves completely. Once the fruit mixture in the pot starts to simmer, add the pectin solution. Stir well to combine.

Step Four

Continue to cook the mixture on medium heat, stirring regularly, for about 20 minutes. When the jam has thickened to your preferred consistency, turn off the heat.

Step Five

Allow the jam to cool a bit before transferring it to clean jars. Make sure to leave about 1/4 inch of space at the top of each jar for expansion. Once filled, close the jars tightly and let them cool completely. Store the jam in the refrigerator and use within a month.
