There’s nothing quite like biting into a warm, fragrant Raspberry Oatmeal Muffin fresh from the oven. Crisp on the outside, marvelously moist on the inside, and bursting with juicy raspberries, it’s the kind of comfort food that reminds me of my childhood in Texas. But there’s more to love about this recipe than just the familiar, down-home goodness – it’s healthy, too!

A Fresh Twist on a Familiar Favorite

Back home, our kitchen was always filled with the aroma of baked goods. Biscuits, cornbread, pies – you name it, we baked it. That’s why when I started developing recipes for Your Gourmet Guru, I knew I wanted to bring a bit of my Southern roots into the mix. My Raspberry Oatmeal Muffins are a perfect example. They have all the hallmarks of a classic muffin, but with a heart-healthy kick of oats and the sweet-tart goodness of raspberries, they’re a unique blend of my Texas upbringing and my passion for nutritious baking.

You might find these muffins reminiscent of a raspberry oatmeal bar. However, these gems are delightfully fluffy and moist, clearly distinguishing themselves as part of the muffin family. They would work well with a cup of coffee for breakfast or as an afternoon snack with some heart-healthy tea.

The Health-Friendly Side of Indulgence

Every bite of these Raspberry Oatmeal Muffins comes with a host of benefits. The oats provide a dose of fiber and protein, both vital for heart health and weight management. Raspberries add a pop of color and flavor and are packed with vitamins, antioxidants, and fiber. Combined, these ingredients create a treat that’s not just delicious but health-promoting as well.

So, as I pass on my beloved Raspberry Oatmeal Muffin recipe to you, I hope you’ll enjoy them as much as I do, whether for their nostalgic pull, their health benefits, or their sheer deliciousness. Here’s to baking and robust health with a Texas flair!

Raspberry Oatmeal Muffins

What You’ll Need

  • 1 cup all-purpose flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup whole milk
  • 1 cup fresh raspberries
ALLERGENS: Gluten, Dairy, Eggs

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a 12-cup muffin tin with paper liners.

Step Two

In a large mixing bowl, combine the all-purpose flour, oats, baking powder, baking soda, and salt. Mix them until they’re well-combined.

Step Three

In a separate mixing bowl, whisk together the sugar, melted unsalted butter, large eggs, pure vanilla extract, and whole milk. Stir until the sugar is fully dissolved.

Step Four

Gradually add the dry ingredients from the first bowl into the second bowl, stirring after each addition. Mix until the batter is smooth and no lumps remain.

Step Five

Gently fold the fresh raspberries into the batter, being careful not to crush them. Stir until the raspberries are evenly distributed throughout the batter.

Step Six

Using a spoon or an ice cream scoop, divide the batter among the prepared muffin cups. They should be about three-quarters full.

Step Seven

Bake the muffins for 20-25 minutes, or until they’re golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step Eight

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.
