What You’ll Need

  • 12 lamb chops
  • 3/4 cup of redcurrant jelly
  • 1/2 cup of balsamic vinegar
  • 4 cloves of garlic, crushed
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste

Method

Step One

Begin by seasoning the lamb chops with salt, pepper and dried rosemary. Ensure the seasonings are rubbed evenly on all sides. Set aside and allow the lamb chops to marinate for a while.

Step Two

Warm a large pan over medium heat and add the olive oil. Once the oil is heated, add the lamb chops. Cook each side for about 3-4 minutes or until they are browned to your satisfaction. Remove the lamb chops from the pan and set them aside.

Step Three

In the same pan, add the crushed garlic and sauté it until it turns fragrant. This should take about a minute.

Step Four

Add the redcurrant jelly and balsamic vinegar to the pan. Stir it around until the jelly melts and mixes well with the vinegar. Let this mixture come to a boil, then turn down the heat and let it simmer until it reduces to a thick glaze. This should take about 10-15 minutes.

Step Five

Return the lamb chops into the pan and smother them with the redcurrant and balsamic glaze. Ensure that all sides of the lamb chops are well coated. Let them simmer in the glaze for a few minutes.
