What You’ll Need

  • 12 ripe plumcots, halved and pitted
  • 1/4 cup honey
  • 1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 3/4 cup vanilla yogurt for serving
  • 1/2 cup granulated sugar for caramelizing (optional)

Method

Step One

Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a baking sheet with parchment paper.

Step Two

Place the halved and pitted plumcots on the lined baking sheet, cut-side up.

Step Three

In a small bowl, combine the honey, vanilla bean (or extract), and lemon juice. Drizzle this mixture over the plumcots, ensuring they are evenly coated.

Step Four

Roast the plumcots in the preheated oven for approximately 20 minutes, or until they are tender and the tops are beginning to caramelize.

Step Five

While the plumcots are roasting, if you choose to caramelize some sugar for serving, place the granulated sugar in a small pan over medium heat. Stir it constantly until it melts and turns a golden-brown color. Be careful not to burn it.

Step Six

Remove the roasted plumcots from the oven and let them cool for a few minutes. Spoon some vanilla yogurt onto each serving plate, top with the roasted plumcots, and drizzle with the caramelized sugar if desired. Serve immediately.
