What You’ll Need

  • 4 lbs Pork roast
  • 1 cup Sarguelas (also known as “Spanish plums”)
  • 2 cloves of Garlic, minced
  • 1 tablespoon Rosemary, fresh
  • 2 tablespoons Honey
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Olive oil
  • Salt and Black pepper to taste

Method

Step One

Preheat your oven to 350°F (175°C). While the oven is preheating, season the pork roast with salt and black pepper.

Step Two

Heat olive oil in a large pan over medium heat. Once the oil is hot, add the pork roast and sear each side until it is browned. This should take about 3-5 minutes per side. Once all sides are browned, remove the roast from the pan and set it aside.

Step Three

In the same pan, add minced garlic and fresh rosemary. Sauté until the garlic turns golden and the rosemary becomes fragrant.

Step Four

Add the Sarguelas, honey, and apple cider vinegar to the pan. Stir everything together and let it simmer for about 5 minutes, or until the Sarguelas are soft and the mixture has reduced slightly.

Step Five

Place the browned pork roast in a roasting pan. Pour the Sarguelas glaze over the pork, making sure to cover all sides.

Step Six

Put the roast pork in the preheated oven and roast it for about 1-1.5 hours, or until the internal temperature of the pork reaches 145°F (63°C). Baste the pork with the juices in the pan every 30 minutes to keep it moist and flavorful.

Step Seven

Once the pork is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This will allow the juices to redistribute throughout the roast, resulting in juicier pork.
