What You’ll Need

  • 1 1/2 pounds of fresh salmon fillet
  • 3 cups of vegetable broth
  • 1 large onion, chopped
  • 2 cups of diced potatoes
  • 2 medium carrots, diced
  • 1 cup of frozen peas
  • 1 leek, sliced
  • 1 cup of diced celery
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh dill, chopped
  • 1 cup of heavy cream
ALLERGENS: Fish (salmon), milk (heavy cream)

Method

Step One

Start by preparing your ingredients. Chop the onion, dice the potatoes and carrots, slice the leek, dice the celery and mince the garlic. Set the prepared vegetables aside.

Step Two

Heat the olive oil in a large pot over medium heat. Add the onion and garlic to the pot and sauté until the onion becomes translucent.

Step Three

Add the diced potatoes, carrots, celery, leek and frozen peas to the pot. Stir everything together and cook until the vegetables start to soften.

Step Four

Pour the vegetable broth into the pot. Bring the mixture to a boil, then reduce the heat and let it simmer.

Step Five

While the vegetable broth is simmering, cut the salmon fillet into chunks. Add the salmon to the pot along with the salt and black pepper. Stir everything together and allow it to cook for about 10 minutes, or until the salmon is cooked through.

Step Six

Stir in the heavy cream and fresh dill. Let the stew cook for an additional 5 minutes to allow the flavors to meld together.

Step Seven
