What You’ll Need

  • 1 pound of chicken breast, cut into small pieces
  • 2 large Santol fruits, peeled and sliced
  • 2 tablespoons of vegetable oil
  • 1 large onion, sliced
  • 2 large bell peppers, sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of sugar
  • 1/2 teaspoon of black pepper
  • 1/2 cup of chicken stock
  • Spring onions, chopped (for garnish)
  • 2 tablespoons of cornstarch, dissolved in water
ALLERGENS: chicken, soy, fish

Method

Step One

Heat the vegetable oil in a large wok or frying pan over medium heat. Once the oil is hot, add the minced garlic and sliced onions. Stir frequently and cook until they are tender and fragrant.

Step Two

Add the chicken breast pieces into the pan. Stir and cook until the chicken is browned on all sides and thoroughly cooked. This should take about five to seven minutes.

Step Three

Add the sliced bell peppers into the pan and stir well. Cook for another two minutes until the peppers begin to soften.

Step Four

Add the sliced Santol fruits into the pan. Stir everything together and let it cook for about a minute, allowing the fruit to heat up and begin to combine with the other flavors.

Step Five

Mix in the soy sauce, fish sauce, sugar, and black pepper. Stir everything together so the flavors are evenly distributed throughout the pan.

Step Six

Pour in the chicken stock and the dissolved cornstarch. Stir the mixture continuously as it comes to a simmer. The sauce should thicken somewhat.

Step Seven

Once everything is evenly coated and heated through, turn off the heat. Sprinkle the chopped spring onions over the top of the dish as a garnish before serving it hot.
