What You’ll Need
- For Saquicos:
- 1 cup of fresh sweet corn
- 4 tablespoons of unsalted butter, melted
- 3/4 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 2 cups of all-purpose flour
- 3 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of whole milk
- 4 eggs
- For Fresh Tomato Sauce:
- 5 large tomatoes, diced
- 2 cloves of garlic, minced
- 1 small red onion, finely diced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1/2 cup of fresh basil leaves, roughly chopped
- 1 tablespoon of red wine vinegar
Method
Step One:
Let us start with the Saquicos. Preheat the oven to 375 degrees Fahrenheit. While it is preheating, in a large bowl, combine the fresh sweet corn, melted unsalted butter, granulated sugar, and vanilla extract. Stir the ingredients until they are well-mixed.
Step Two:
In the same bowl, add the all-purpose flour, baking powder, and salt. Stir these dry ingredients into the wet mixture. Then, gradually add the whole milk, while continuously stirring, to avoid lumps in the mixture.
Step Three:
Beat the eggs properly and then add them to the bowl. Make sure that they are mixed well with the previous ingredients. Once done, pour this mixture into muffin tins and place them in the preheated oven. Let it bake for around 20-25 minutes or until a toothpick inserted comes out clean.
Step Four:
While the Saquicos are baking, we can start with the Fresh Tomato Sauce. In a saucepan, heat the olive oil over medium flame. Once hot, add the finely diced red onion and minced garlic to it. Sauté these ingredients until the onions become translucent.
Step Five:
Add the diced tomatoes to the saucepan along with salt and pepper to taste. Let it cook for about 15 minutes or until the tomatoes are completely softened. Stir occasionally to prevent the mixture from sticking to the pan.
Step Six:
Now, chop the fresh basil leaves roughly and add them to the saucepan. Also, pour in the red wine vinegar. Stir the sauce well and let it simmer for another 5 minutes.
Step Seven:
By now, the Saquicos should be baked and ready. Remove them from the oven and allow them to cool. Once they are cool enough to handle, plate them up and serve with the fresh tomato sauce. Enjoy your Saquicos with Fresh Tomato Sauce!
