What You’ll Need

  • 24 large shrimp, peeled and deveined
  • 2 Satsuma oranges, peeled and cut into pieces
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon white sugar
  • 1/2 teaspoon black pepper
  • 1 fresh lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 6 wooden skewers, soaked in water for 30 minutes
ALLERGENS: shrimp

Method

Step One

Take the 24 large shrimp and make sure they are peeled and deveined well. Keep them aside for later.

Step Two

Peel two Satsuma oranges and cut them into pieces. These will be skewered later with the shrimp, so make sure the pieces aren’t too small.

Step Three

In a bowl, mix together 1 tablespoon chili powder, 1 tablespoon kosher salt, 1 tablespoon white sugar, and half a teaspoon of black pepper. This will act as the seasoning for the shrimp.

Step Four

Add the peeled shrimps into the bowl of spices, followed by 2 tablespoons of olive oil; toss to ensure every shrimp is coated with the mixture. Allow this to marinate for at least 30 minutes to let the flavors penetrate the shrimp.

Step Five

While the shrimp are marinating, take the wooden skewers and soak them in water for about 30 minutes. This will prevent them from burning when you grill the skewers.

Step Six

Once the shrimp are well-marinated, thread them on the wooden skewers along with the sliced Satsuma oranges. Aim for a nice alternation between shrimp and orange sections.

Step Seven

Preheat your grill on medium-high heat. Make sure it’s hot before grilling the skewers. Place the skewers on the grill and cook for 2-3 minutes on each side or until shrimp are cooked through and have a nice char.

Step Eight

In the meantime, squeeze fresh lime juice and chop up a quarter cup of fresh cilantro. Once the skewers are off the grill, drizzle with fresh lime juice and sprinkle chopped cilantro on top. Serve hot and enjoy this refreshing, flavorful dish!
