What You’ll Need

  • 3 cup of diced catmon fruit
  • 2 cup of apple cider vinegar
  • 1 1/2 cup of granulated sugar
  • 2 red chilis, deseeded and finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon of finely grated fresh ginger
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1/2 cup of golden raisins
  • 1/2 cup of dried apricots, chopped
  • 1 small red onion, finely chopped
  • 2 tablespoon of mustard seeds
  • 1/4 teaspoon of salt

Method

Step One

Prepare your ingredients: peel and dice the catmon fruit, deseed and finely chop the red chilis, mince the garlic, grate the fresh ginger, chop the dried apricots and finely chop the red onion.

Step Two

In a large pot, combine the diced catmon fruit, apple cider vinegar, granulated sugar, chopped chillis, minced garlic, grated ginger, ground turmeric, ground cumin, golden raisins, chopped dried apricots, chopped red onion, mustard seeds and salt. Stir all the ingredients well to evenly distribute.

Step Three

Place the pot over medium heat, bring it to a boil, stirring occasionally. Once the mixture starts to boil, reduce the heat to low and let it simmer.

Step Four

Simmer the chutney for about 1-2 hours, stirring occasionally, until it thickens and the fruit is soft and translucent.

Step Five

Once the chutney has thickened, remove it from heat and let it cool. After cooling, transfer the chutney to clean jars, seal tightly and store in the refrigerator. The chutney is ready to serve with crackers, cheese or your favourite dishes after chilling for at least 24 hours.
