What You’ll Need

  • 2 cups of Koseret leaves, finely chopped
  • 1 cup of mixed fresh fruit (pineapple, apple), chopped
  • 4 medium-sized fresh chillies, chopped
  • 1 tablespoon of minced garlic
  • 1 tablespoon of minced ginger
  • 1 tablespoon of vegetable oil
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of white sugar
  • 1 teaspoon of salt
  • 1 cup of water

Method

Step One

Place a pan over medium heat, and add 1 tablespoon of vegetable oil. When the oil is hot, add 1 tablespoon of minced garlic and 1 tablespoon of minced ginger. Stir fry them for about 1 minute until they release their aroma.

Step Two

Add the 2 cups of finely chopped Koseret leaves and 4 chopped medium-sized fresh chillies to the pan. Stir fry for about 2-3 minutes until the leaves are wilted and well-coated with the oil.

Step Three

Add 1 cup of chopped mixed fresh fruit to the pan and stir well. Pour in 1 cup of water, 2 tablespoons of apple cider vinegar, 1 teaspoon of salt, and 2 tablespoons of white sugar. Stir everything well to combine.

Step Four

Bring the mixture to a boil, then turn down the heat to low and let it simmer. Stir occasionally for about 15-20 minutes until the sauce has thickened to your desired consistency.

Step Five

Switch off the heat and let the sauce cool before transferring it to a blender. Blend until smooth, then pour the sauce into a clean jar. Store in the refrigerator and use as a dip or a sauce for your dishes.
