What You’ll Need

  • 2 large green papayas, peeled and finely shredded
  • 1 cup of fresh lime juice
  • 3 tablespoons of fish sauce
  • 1 tablespoon of sugar
  • 4 Thai chilli peppers, finely chopped
  • 3 large cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of dry roasted peanuts, roughly chopped
  • 1/2 cup of fresh cilantro, chopped
  • 1/2 cup of fresh mint leaves, chopped
  • 2 green onions, thinly sliced
ALLERGENS: fish sauce, peanuts

Method

Step One

Start off by peeling the two large green papayas and shred them finely. Keep it aside.

Step Two

In a large bowl, combine the fresh lime juice, fish sauce, sugar, Thai chilli peppers and minced garlic. Stir this well until the sugar dissolves.

Step Three

Add the shredded papaya to the bowl with the mixture. Toss well to ensure the papaya is well coated with the dressing.

Step Four

Next, add in the halved cherry tomatoes, roughly chopped dry roasted peanuts, chopped fresh cilantro, fresh mint leaves and thinly sliced green onions. Toss all the ingredients together until they are well combined.

Step Five

Leave the salad to marinate for at least 10-15 minutes before serving to allow the flavours to develop.

Step Six

When ready to serve, give the salad one last stir. Taste and adjust the seasoning if necessary. Serve your Spicy Papaya Salad immediately and enjoy!
