What You’ll Need

  • 1 pound of flat rice noodles
  • 2 blocks of firm tofu
  • 4 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced thinly
  • 1 cup of shredded carrots
  • 1/2 cup of unsalted peanut butter
  • 5 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 1 tablespoon of chili garlic paste
  • 1 cup of water
  • 1/4 cup of lime juice
  • 1/2 cup of chopped roasted peanuts
  • 1/2 cup of thinly sliced green onions
  • 1/2 cup of chopped fresh cilantro

Method

Step One
