Having grown up in the Rocky Mountains, my culinary creations are often reminiscent of the wholesomeness and wild beauty of the great outdoors. One recipe that shines as a personal favorite is the Spicy Saquicos Stir Fry. A delightful fusion of tropical fruits layered with heat and refreshing herbs, this stir fry brings to mind the vivid colors of Colorado’s wild bloom and the invigorating spice of the rugged terrain.
An Unconventional Stir Fry With a Zest of Adventure
Typically, when you think of stir fry, chicken or beef might spring to mind. However, this Spicy Saquicos Stir Fry takes a delicious detour embracing fruits as the main ingredient. Featuring the exotic Saquicos fruit, ripe bananas, sweet mango, and tangy pineapple, this dish pays vibrant homage to the diversity of Mother Nature. And then, of course, there’s that hints of red pepper flakes – reflecting the piquant sense of adventure synonymous with my Colorado roots. Teamed with a sauté of aromatic garlic and a generous drizzle of olive oil, this stir fry is a beautiful balance of tantalizing flavours.
The Nutritional Scoop and Serving Suggestions
Not only does this recipe pack a punch in flavour, but it’s also chock-full of health benefits. Saquicos fruit, rich in vitamin C and antioxidants, works hand in hand with the other fruits to boost your immune system. While the honey brings natural sweetness, it also offers antibacterial properties. Furthermore, the olive oil and the trio of herbs (basil, mint, and cilantro) not only contribute to the robust flavours of this dish but also contribute to heart health and digestive well-being.
The Spicy Saquicos Stir Fry pairs wonderfully with light mains like grilled chicken or fish. And given the similar tropical vibes, it’s also a pleasing side dish for Caribbean influenced meals. My partner Gordon is particularly a fan of this alongside his grilled sea trout.
In conclusion, this Spicy Saquicos Stir Fry is the perfect medley of tongue-tickling flavours, healthful ingredients, and a spark of culinary innovation. It’s a true love letter to my love for cooking, my respect for Mother Nature, and my unwavering zest for life.
What You’ll Need
- 2 cups of sliced Saquicos fruit
- 1 cup of sliced pineapple
- 2 ripe bananas, sliced
- 1.5 cups of diced mango
- 2 tablespoons of olive oil
- 1 tablespoon of red pepper flakes
- Juice of one lime
- 1/4 cup of honey
- 3 cloves of garlic, minced
- Salt to taste
- 1/4 cup of chopped fresh basil
- 1/4 cup of chopped fresh mint
- 1/4 cup of chopped fresh cilantro
Method
Step One
Start by preparing all the fruits: Slice 2 cups of Saquicos fruit, 1 cup of pineapple, and 2 ripe bananas. Dice 1.5 cups of mango and set these aside.
Step Two
Place a large pan over medium heat and add 2 tablespoons of olive oil. Once the oil is hot, add the minced garlic and red pepper flakes. Sauté these together until the garlic becomes fragrant.
Step Three
Next, add all the sliced and diced fruits to the pan. Cook the fruits in the sautéed garlic and pepper mixture until they begin to soften and release their juices.
Step Four
While the fruits are cooking, combine the juice of one lime and 1/4 cup of honey in a small bowl. Stir this mixture well until completely combined.
Step Five
After the fruits have softened a bit, pour the lime and honey mixture over them in the pan. Stir to ensure the fruits are well coated. Add salt to taste.
Step Six
Finally, add the chopped fresh basil, mint, and cilantro to the pan. Give everything a good stir, allowing the heat from the pan to wilt the herbs slightly. Serve your Spicy Saquicos Stir Fry immediately, garnishing with additional fresh herbs if desired.
