What You’ll Need

  • 3 star apples
  • 1 cup of sugar
  • 1 tablespoon of lime juice
  • 2 cups of water
  • 1 tablespoon of grated lime zest
  • Mint leaves for garnish

Method

Step One

Begin by washing the star apples thoroughly. Cut them in half and scoop out the flesh. Discard the seeds and the outer shell.

Step Two

In a saucepan over medium heat, combine the star apple flesh, sugar, and water. Stir until the sugar has completely dissolved and the mixture comes to a boil.

Step Three

Once the mixture has boiled, reduce the heat and let it simmer for about 20 minutes until the star apple becomes soft. Then, remove from heat and allow the mixture to cool.

Step Four

After the star apple mixture has cooled, place it in a blender or food processor. Add the lime juice and the grated lime zest. Blend until the mixture is smooth and homogeneous.

Step Five

Transfer the blended mixture to an airtight container and freeze for at least 4 hours or until firm.

Step Six

Before serving, allow the sorbet to sit at room temperature for a few minutes to soften. Scoop into bowls or glasses, garnish with mint leaves, and serve immediately.
