Born out of the rustic cooking styles that I learned amidst the great outdoors of the Rocky Mountains, and my love for the balanced flavors of Asian cuisine, this Stir-fried Welsh Onion with Beef is a fantastic dish to serve when you want something that is satisfying but also light and fresh. I am reminded of hunting trips with my partner, Gordon, in Colorado. What You’ll Need

  • 1 1/2 lbs Beef Sirloin, thinly sliced
  • 2 cups Welsh Onions, sliced diagonally
  • 3 tablespoons Vegetable Oil
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh Ginger, minced
  • 1/2 cup Oyster Sauce
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Cornstarch
  • 1/4 cup Cold Water
  • 1/4 cup Beef Broth
  • Assorted bell peppers (optional)

Method

Step One:

Begin by prepping all of your ingredients. Slice the beef sirloin thin, ensure your Welsh onions are cut diagonally, mince your garlic and fresh ginger.

Step Two:

In a large wok or deep frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, add in the minced garlic and ginger. Stir until fragrant for around 1-2 minutes.

Step Three:

Add the thinly sliced beef sirloin to the wok. Continue stirring and cooking until the beef is nearly cooked through, around 5-7 minutes.

Step Four:

While the beef is cooking, in a small bowl, combine the oyster sauce, soy sauce, sugar, cornstarch, cold water, and beef broth. This will be your sauce for the stir fry. Stir the ingredients together until the cornstarch is fully dissolved.

Step Five:

Pour the prepared sauce over the beef in the wok. Stir to combine. Continue cooking for a further 2-3 minutes, allowing the sauce to thicken slightly.

Step Six:

Add the sliced Welsh onions and optional bell peppers to the wok. Stir to combine all of the ingredients well. Cook for another 2-3 minutes or just until the Welsh onions and bell peppers soften slightly.

Step Seven:

Remove the wok from the heat. Your stir-fried Welsh onion with beef is now ready to be served. Enjoy with a side of steamed rice if desired.
