What You’ll Need

  • 2 cups of fresh strawberries
  • 2 cups of Greek yogurt
  • 1/2 cup of granola
  • 4 tablespoons of honey
  • 1 teaspoon of vanilla extract
  • 1/2 cup of whipped cream
  • 2 tablespoons of powdered sugar
  • Mint leaves for garnish (optional)

Method

Step One

Begin by washing the fresh strawberries thoroughly. Then, remove the stems and cut them into halves. Set them aside.

Step Two

In a medium-sized bowl, mix together the Greek yogurt, honey and vanilla extract until well combined.

Step Three

Next, take four glasses and start layering the parfait. Begin with a layer of the Greek yogurt mixture, followed by a layer of the halved strawberries and then a sprinkle of granola.

Step Four

Repeat the layers until the glasses are filled to the top. Make sure to end with a layer of the Greek yogurt mixture and granola at the very top.

Step Five

Now, in a separate bowl, beat the whipped cream until it forms soft peaks. Then, gently fold in the powdered sugar until it’s well combined.

Step Six

Spoon a generous dollop of the whipped cream on top of the parfaits, directly on top of the granola layer.

Step Seven

Finally, garnish with a few more strawberry halves and fresh mint leaves, if desired.

Step Eight

Chill the parfaits in the refrigerator for a minimum of 2 hours before serving. Enjoy your homemade strawberry parfait!
