What You’ll Need
- 3 ripe avocados
- 1 lb shredded cooked chicken
- 1 cup of sweet corn
- 1 red bell pepper, diced
- 1/2 cup chopped cilantro
- 1/2 cup diced red onion
- 1 jalapeno, diced
- 1 cup cherry tomatoes, halved
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Method
Step One
Start by cutting the avocados in half and removing the seeds. Carefully scoop out some of the avocado flesh around the pit area to create more space for the stuffing. Set aside the scooped avocado for later use.
Step Two
In a large bowl, combine the shredded chicken, sweet corn, diced red bell pepper, chopped cilantro, diced red onion, diced jalapeno, halved cherry tomatoes and the previously set aside scooped avocado. Mix well.
Step Three
