What You’ll Need

  • 1.5 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of salt
  • 9 tablespoons of unsalted butter, cold
  • 2-3 tablespoons of cold water
  • 1.5 cups of almond meal
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsalted butter, at room temperature
  • 1 teaspoon of vanilla extract
  • 2 large eggs
  • 4-5 tangerines
  • 1/2 cup of apricot jam
  • 2 tablespoons of water
  • 1/2 cup of sliced almonds, toasted

Method

Step One

In a large bowl, mix together the all-purpose flour, 1/4 cup of granulated sugar, and salt. Cut in the 9 tablespoons of cold unsalted butter until the mixture resembles coarse crumbs. Add the cold water, one tablespoon at a time, until the dough comes together. Roll the dough into a ball, wrap in plastic, and refrigerate for at least one hour.

Step Two

Preheat your oven to 350°F (175°C). Roll out the dough on a lightly floured surface and fit it into a tart pan. Prick all over with a fork and bake for 15 minutes, or until lightly golden. Allow to cool.

Step Three

In a separate bowl, mix together the almond meal, 1/2 cup of granulated sugar, 1/2 cup of room temperature butter, and vanilla extract until well incorporated. Add the eggs one at a time, beating well after each addition.

Step Four

Pour the almond mixture into the cooled tart shell. Thinly slice the tangerines and arrange them on top of the almond filling. Bake for 25-30 minutes, or until the tart is golden and the filling is set. Allow the tart to cool completely.

Step Five

In a small saucepan over low heat, combine the apricot jam and 2 tablespoons of water. Stir until the jam is melted and smooth. Brush this glaze over the cooled tart.

Step Six

Sprinkle the toasted sliced almonds over the top of the tart. Slice and serve. Enjoy your Tangerine and Almond Tart!
