A Dance of Flavors

If you’ve caught on, I tend to think of my recipes – and particularly this Tangerine and Prosecco Mimosas cocktail – as a dance. Each ingredient pirouetting with the other, much like the Salsa rhythm I teach my students in Miami. The Cuban Azúcar that courses through my veins, whispers of creativity and passion into each dish and drink I prepare.

This recipe is reminiscent of a classic Spanish recipe, the Agua De Valencia, where the sweetness of orange and the charm of champagne is married together. The Tangerine and Prosecco Mimosas could be the star of your brunch or a refreshing aperitif that works strikingly well with a plate of tapas or the traditional Spanish Paella. If you’re interested in Spanish classics like this one, I recommend exploring the works of Simone Ortega, who’s influenced my passion for Spanish cuisine greatly.

What You’ll Need

  • 6 large tangerines
  • 3 tablespoons of granulated sugar
  • 1 bottle of Prosecco, chilled
  • Mint leaves for garnish
  • Ice cubes (optional)
ALLERGENS:

Method

Step One

Start by squeezing the tangerines. You should be able to extract about 2 cups of juice. If you don’t have a citrus juicer, simply cut the tangerines in half and squeeze the juice out manually. Make sure to remove any seeds.

Step Two

In a small bowl, add the granulated sugar. Then pour a little of the tangerine juice into the bowl and stir well to dissolve the sugar in the juice. It’s easier to dissolve the sugar in a small amount of liquid before adding the remainder.

Step Three

Add the sugared juice back into the rest of the tangerine juice and stir thoroughly. If you choose not to add sugar, simply skip the second step.

Step Four

Divide the tangerine juice amongst the champagne flutes, filling each about one-third of the way. Then fill the rest of each glass with Prosecco, leaving a little room at the top.

Step Five

If desired, add ice cubes to each glass. This is optional and based on your preference. Some people prefer their mimosas very cold, whereas others prefer them without additional ice.

Step Six

Garnish each glass with a sprig of mint to add a pop of color and a refreshing aroma. Your Tangerine and Prosecco Mimosas are now ready to be served and enjoyed!
