What You’ll Need
- 1 cup of fresh tamarind pulp
- 1/2 cup of fresh lime juice
- 1/4 cup of finely chopped fresh ginger
- 2 cloves of minced garlic
- 1/2 cup of chopped fresh cilantro
- 1/4 cup of finely chopped fresh mint
- 1 small red onion, finely chopped
- 1-2 fresh jalapeno peppers, chopped (remove seeds for less heat)
- 2 tablespoons of Asian fish sauce (optional)
- 1 flat tablespoon of raw sugar
- 1/2 tablespoon of salt
- 1/2 cup of crushed peanuts
Method
Step One
Start by prepping all your ingredients. Get your fresh tamarind pulp ready by placing it in a bowl. Finely chop your fresh ginger, fresh cilantro, fresh mint, and red onion. Mince your garlic cloves. Chop your jalapeno peppers and remember to remove the seeds if you prefer less heat.
Step Two
Take another large bowl, add the fresh tamarind pulp into it. To this, add the fresh lime juice, chopped ginger, minced garlic, chopped cilantro, fresh mint, finely chopped onion, and your chopped jalapenos.
Step Three
Stir all the ingredients together until they are well mixed. In case you decide to use Asian fish sauce, now is the best time to add it.
Step Four
Next, sprinkle the raw sugar and salt over your mixture. Then stir everything until the sugar and salt have been thoroughly incorporated into the salsa.
Step Five
To finish up, sprinkle your crushed peanuts on top of the salsa and serve.
Note: This salsa pairs well with grilled seafood or chicken but can also be used as an exotic dip for chips.
